Fried Burritos w/ Chili Bean Filling

Ingredients
- Sun Vista Canned Pinto Beans
- Ground Beef
- 2 Chili Packs (McCormick or Lawry's)
- Cumin
- Stewed Tomatoes
- Garlic Powder
- Onion Powder
- Lawry's Seasoning Salt
- Pepper
- Chili Powder
- Salt
- Large tortillas
- Frying oil (vegetable, canola, olive etc.)
- Cheese, if desired

Chili Bean Filling
- Place beans in a pot alone. Turn stove on Med/Low to begin heating beans. (Be sure to drain about half of the excess juice from the can before placing them in pot)
- Place stewed tomatoes in a small skillet to soften. Heat on low.
- Cook and drain ground beef. After draining, return ground beef to original skillet, add chili packs (1 or 2 depending on how much meat you have), and add water. Allow seasoning to simmer, and soak into ground beef for time allotted on packet.
- Begin adding remaining seasonings (Lawrys, pepper, garlic powder, onion powder, chili powder, salt, cumin) to ground beef, (be careful not to add too much salt, as your beans will be salty. Always remember, you can always add salt, but you can't take it away).
- The KEY INGREDIENT is cumin. This will give you the "bean" taste you are looking for. If you have never cooked with cumin before, smell it & taste a dab of it. This should heighten your senses as to what flavor it will bring to your meat.
- For more spice, add chili powder and pepper.
- Add stewed tomatoes to meat.
- Remember, you want juicy meat - NOT DRY.
- After meat is done, add the meat to the beans.
- Mix the contents completely, and taste. If necessary, add more seasonings. I can almost guarantee you may be adding more cumin!(;

Making the Burrito
- Heat oil in a skillet on Med/Low.
- Place tortilla on plate to prepare contents.
- Add cheese to the center of the tortilla. If using sliced cheese, be sure to cut it into strips for easy melting.
- Add 2 large spoonfuls of chili beans to the center of tortilla on top of the cheese strips.
- Fold into a burrito.
- Place burrito into the skillet with the top facing up. This will cook the bottom flap first, ensuring the contents of the inside of the burrito remain inside, and don't leak out into the oil.
- Fry until browned to your preference.
- Flip the burrito, and repeat on opposite side.
- Remove burrito from skillet, placing it on a paper towel to drain excess cooking oil from outer layer.
- Enjoy with your favorite condiments; suggestions: ketchup, hot sauce, or taco sauce.
